Mousse Puffs

I had to make 100 of these suckers this week as dessert for a meeting I had. They're easy enough to make and freeze well too.

For puffs:

½ c butter
1 c water
1 c flour
¼ t salt
4 eggs

Melt butter and water, bring to a boil. Add flour and salt at once and stir into ball. Add eggs one at a time, stirring and mixing thoroughly after each addition. Drop ¼ c of mix on greased cookie sheet and bake at 400 for 30 minutes till golden. Makes 10.

For chocolate mousse:
1 ½ c semi sweet chocolate chips
1 8-oz pkg of cream cheese
1 1/3 c powdered sugar
2 c whipping cream
2 t vanilla

Melt chips, cool, slightly and add cream cheese, sugar, vanilla. Beat thoroughly until very smooth. In a separate bowl whip cream till stiff then add to chocolate-cream cheese mixture and mix to combine. Spoon 1/2 c over cooled and split cream puffs, replacing top of cream puff. If desired, garnish with purreed raspberry drizzled on plate.
