Coconut-Cream Cheese Pound Cake

Coconut-Cream Cheese Pound CakeYou can't go wrong with a pound cake. Or with cream cheese. In fact the combination just couldn't get any better and top the treat off with whipped cream and blueberries and you're in heaven.

1/2 cup butter, softened
1/2 cup shortening
1 8-ounce package cream cheese
3 cups sugar
6 large eggs
3 cups flour
1/4 teaspoons baking soda
1/4 teaspoon salt
1 6-ounce package coconut
1 teaspoon vanilla extract
1 teaspoon coconut extract

Beat the butter, shortening and cream cheese until creamy. Gradually add the sugar, beating 5-7 minutes. Then add the eggs one at a time until the yellow disappears. Combine the flour, baking soda and salt and add it to the butter mix, beating on low until blended. Stir in the coconut, vanilla extract and coconut extract. Pour the batter into a greased and floured 10-inch tube pan. Bake at 325 for 1 hour 30 minutes until a toothpick inserted into the thickest part comes out clean.
